Ingredients List
For the Oreo Cookie Crust:
24 Oreo cookies, finely crushed including the filling
5 tbsp unsalted butter, melted
Pinch of salt
For the Cherry Cheesecake Filling:
24 oz full fat cream cheese, room temperature
1 cup granulated sugar
1 cup full fat sour cream, room temperature
3 large eggs, room temperature
2 tsp vanilla extract
1 tbsp all-purpose flour
1 cup fresh or frozen black cherries, pitted and roughly chopped
For the Dark Cherry Compote:
2 cups fresh or frozen dark cherries, pitted
1/3 cup granulated sugar
2 tbsp lemon juice
1 tsp cornstarch mixed with 1 tbsp cold water
Whole fresh cherries with stems for garnish
Step by Step Instructions
Step 1: Make the Oreo Crust
Preheat oven to 325 degrees F and grease a 9 inch springform pan
Crush Oreos to a fine crumb in a food processor or zip lock bag
Mix crumbs with melted butter and salt until every crumb is coated
Press firmly and evenly into the bottom and slightly up the sides of the pan
Bake the crust for 10 minutes then let cool while you make the filling
Step 2: Make the Cheesecake Filling
Beat room temperature cream cheese on medium speed for 3 minutes until completely smooth with no lumps
Add sugar and beat for 2 more minutes until fluffy
Add sour cream, vanilla, and flour and mix until just combined
Add eggs one at a time beating on low speed after each one — do not overmix after eggs go in
Gently fold the chopped black cherries into the finished batter with a spatula
Pour the filling over the cooled Oreo crust and smooth the top
Step 3: Bake Using the Water Bath Method
Wrap the outside of the springform pan tightly in two layers of aluminum foil
Place the wrapped pan inside a larger roasting pan
Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan
Bake at 325 degrees F for 60 to 70 minutes until the edges are fully set and the center has a slight jiggle
Turn the oven off and leave the cheesecake inside with the door cracked for 1 hour
Remove from the oven and cool completely at room temperature then refrigerate overnight
Step 4: Make the Dark Cherry Compote
Combine cherries, sugar, and lemon juice in a saucepan over medium heat
Cook for 8 to 10 minutes until the cherries break down and release their juice
Add the cornstarch slurry and cook for 2 more minutes until thick and glossy
Cool completely before pouring over the chilled cheesecake
Step 5: Top and Serve
Remove the cheesecake from the springform pan onto a serving plate
Pour the cooled cherry compote over the top letting it drip naturally over the edges
Pile whole fresh cherries with stems on top of the compote
Slice with a hot knife wiped clean between each cut for perfect clean slices
Serve immediately or refrigerate for up to 4 days
Top Black Cherry Cheesecake Questions — Answered!
Question 1: “How do I stop my cheesecake from cracking on top?”
The water bath is the single most effective crack prevention method. It keeps the oven humid and the cheesecake bakes gently and evenly. Never open the oven door during baking and always let it cool slowly inside the turned off oven before removing.
Question 2: “Can I use frozen cherries instead of fresh?”
Yes, frozen cherries work perfectly in both the filling and the compote. Thaw and drain them well before adding to the batter so excess moisture does not affect the filling texture.
Question 3: “How far ahead can I make this cheesecake?”
The cheesecake without the cherry topping keeps refrigerated for up to 4 days. Add the compote and fresh cherry garnish on the day you plan to serve it for the most beautiful presentation.
Pro Tips for the Perfect Black Cherry Cheesecake
Room temperature ingredients are non-negotiable — cold cream cheese creates lumps that never fully smooth out
Beat eggs on low speed and only until just combined — overbeating eggs is the second biggest cause of cracks after skipping the water bath
The overnight refrigeration is not optional — a cheesecake sliced before it is fully set will not hold its shape
Use a hot clean knife for every single slice — dip in hot water, wipe dry, then cut for perfect clean edges
The compote must be completely cool before pouring over the cheesecake — warm compote melts the surface
Delicious Variations
Strawberry Cheesecake: Swap black cherries for fresh strawberries in the filling and use a homemade strawberry compote on top instead of cherry.
White Chocolate Cherry Cheesecake: Melt 4 oz of white chocolate and fold it into the batter for a richer sweeter filling that pairs beautifully with the tart cherry compote.
No Bake Cherry Cheesecake: Use a no bake cream cheese and heavy cream filling set overnight in the fridge for a no oven version that is just as creamy and delicious.
Mini Cherry Cheesecakes: Press the Oreo crust into a lined muffin tin and fill with the cheesecake batter for individual mini cheesecakes perfect for parties and events.
